For Brisbanites, there are only a handful of Peking duck choices. Pine and
Bamboo, my favorite Chinese restaurant in the area, recently has a
competition from a new kid on the block, Yum Yum Peking duck in Darra,
which has gained quite a bit of press coverage. So I set out for Darra to
check it out. The result was very disappointing.
First of all, Yum Yum was not much cheaper as they would lead you to
believe. Pine and Bamboo charges $55 for two courses and Yum Yum charges
you the same for 3 courses, not hell of a difference, and Yum Yum was
pretty much a hole in the wall. On top of that, Yum Yum had a much smaller
duck than Pine and Bamboo. I knew something was awfully wrong when Yum
Yum's owner started slicing the duck, there was way too much MEAT sliced
along with the skin. The essence of Peking duck is the SKIN! One is not
supposed to cut too much meat off along with the skin, because that will
most definitely upset the balance between the crispiness of the skin, the
sweetness of the sauce, the crunchiness of cucumber and the pungency of
scallion all wrapped in a chewy pancake.
The second blunder of Yum Yum was, they carved the skin and distributed
the portions of duck, cucumber, scallion and sauce FOR you. That was
completely appalling. Everyone has his own preference of the mix, so
wrapping on behalf of the customer is considered a sin. I didn't like my
wrap one bit, it was full of meat, the moisture of which completely soaked
through the skin, destroying its crispiness.
The third course, duck soup was a joke. The soup base was prepared way
beforehand and loaded with starch, spotted by a few duck bones here and
there, while Peking duck soup was supposed to be cooked right after the
carving with cabbage, so the dissolved fat would give the soup base a
milky look and taste.
If Yum Yum had been much cheaper, say, at least 1/2 cheaper than Pine and
Bamboo, I would have been more content with my experience, but it isn't.
My verdict is, Pine and Bamboo is still unarguably the best Peking duck
place in Brisbane, by far.
